Brownies!!!!!

Baking is my outlet for sure! I love making yummy treats for the people in my life to enjoy and its just a shit ton of fun being in the kitchen! Its been raining on and off this week and while the weather outside doesn’t decide if I am gonna bake or not, yes I’ll even bake in the Summer!! There is something about the rain that just makes it feel even more like a baking day!

So on one of the rainy days I found myself in the kitchen with the baking bug! There is this brownies recipe I found awhile ago that is SO FREAKING GOOD!!!! No really, this recipe is the best I have come across for brownies. I wanted to make the brownies a little bit more healthy, I mean they are still brownies but I switched out a few of the ingredients to make it less of a guilty pleasure lol!!

The 3 ingredients I changed was the sugar, using coconut sugar instead of white sugar, for the flour I switched out regular flour with Gluten free flour and for the chocolate chips, instead of semi sweet chocolate chips I used Lilly’s chocolate chips that are sweetened with stevia so between the coconut sugar and Stevia these brownies are white sugar free!

  • 1/2 cup white sugar, I used Organic Coconut Palm Sugar
  • 2 tablespoons butter
  • 2 tablespoons water
  • 1 1/2 cups semisweet chocolate chips, I used Lilly’s chocolate chips sweetened with stevia
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2/3 cup all-purpose flour, I used Multipurpose Gluten Free Flour.
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Preheat oven to 325 degrees. Grease an 8×8 inch square pan.

In a medium saucepan, combine the sugar, butter and water. Cook over medium heat until boiling. Remove from heat and stir in chocolate chips until melted and smooth.

Mix in the eggs and vanilla. Combine the flour, baking soda and salt, stir into the chocolate mixture. Spread evenly into the prepared pan.

Bake for 25 to 30 minutes in the preheated oven, until the brownies set up. Do not overtake! Cool in pan and cut into squares!
