Just because you are Gluten Free doesn’t mean you can’t have uhmazing cookies!! Holy cow the gluten free flours have come a long way!
One I really like is Bob’s Red mill gluten free 1 to 1 baking flour, works so much like gluten filled flour you will be shocked and happy with the taste!!!
I decided to try Bob’s Red Mill gluten free baking flours recipe for the Classic Chocolate Chip Cookie, This recipe is easy to follow for you and your kiddos to make together and it’s pretty darn yummo!!
Ingredients
2 1/4 cups Bob’s Red Mill Gluten free 1 to 1 Baking flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups Chocolate Chips
1 cup chopped Walnuts (optional)
Preheat oven to 375 degrees. Line two baking sheets with parchment paper. Mix flour, baking soda and salt in a small bowl. Set aside. Beat butter, sugar, brown sugar and vanilla extract in a large bowl until creamy (I use a mixer). Add eggs, one at a time, beating well after each addition. Gradually add flour mixture and beat until well blended. Stir in chocolate chips and nuts (if desired).
Roll dough into balls, about 2 tablespoons each. Place 2 inches apart on prepared baking sheets. Bake for 11-13 minutes or until golden brown. Cool on baking sheets for 5 minutes. Move to wire rack to cool completely. Makes 36 cookies.
Now to make to make them Halloween festive is SUPER easy!!! Hey this will work in a pinch when you want to make something that tastes good but doesn’t take forever to decorate!!! You folks with kiddos only have so much time!!
Take candy eyes and stick them on your cookies with Wilton Gel in Black…
Just have fun with the eyes and gel, you can put the eyes all over the cookie or make a silly scary face!!
