After joining Ophir 4-H this year as a Project leader for a baking project I thought ya know I have a bunch of recipes that I’ve made with my nieces and goddaughter that the girls in my group should like making however I like to put 100 percent into whatever it is I am doing so I started looking for stuff I havne’t made as well and also starting mixing different stuff together to see how it will taste. That’s how I came up with the Chocolate Peanut Butter frosting, hellloooo who doesn’t love chocolate and peanut butter!! So that frosting is my own I am sharing with you.
The Raspberry frosting came about while looking for a recipe for Strawberry frosting and when I saw it I thought ya know I usually don’t like fruit with my desserts but holy crap this frosting sounds good and you know what it’s really good!! Hope you enjoy using these frostings on your favorite cake or cupcake recipe!
Raspberry Frosting (www.sallysbakingaddiction.com one of my favorite sources!)
· 3/4 cups (170g) unsalted butter, softened to room temperature
· 3 and 1/2 cups (420g) confectioners’ sugar ( I used 3 cups)
· 3 Tablespoons (45ml) heavy cream ( I used milk)
· 2 teaspoons vanilla extract
· 1/4 teaspoon salt, to taste
· 1/2 cup (165g) thick raspberry preserves or jam ( I used raspberry preserves)

Beat softened butter on medium speed about 3-4 minutes make sure it’s completely smooth and creamy, then add the confectioners’ sugar, cream, vanilla extract, and salt you can do this with the mixer running. Increase to high speed and beat for about 1 minute then add the raspberry preserves or jam whatever one you are using.
Then beat until thick and creamy, about 2 full minutes. Add more powdered sugar if frosting is too thin, is separating (due to the fruity jam) or looks too wet. And then add more salt to offset added sweetness.
Chocolate and Peanut Butter Frosting by me!
1 cup unsalted butter, room temperature, softened
1/3 cup peanut butter
2 cups powdered sugar
½ cup unsweetened cocoa powder
2 teaspoons vanilla
2-3 tablespoons milk (just depends on thick you want the frosting)
With a handheld or stand mixer using the paddle attachment, beat the butter and peanut butter until smooth and creamy.
Turn your mixer to LOW and add 2 cups powdered sugar and cocoa powder. Then turn up your mixer and beat until mixed in with the butter/peanut butter.
Then and add the vanilla and milk. Thoroughly mix all together. Enjoy the yumminess!!
