Muffin Time

Muffins are yummy year round but I especially like them in the Fall! It’s a good idea to have an awesome banana nut muffin recipe lying around so when those bananas you bought and had every intention of eating start to go bad they will be the perfect mushiness for banana nut muffins!! There are a lot of recipes out there for banana nut muffins I gotta say what I like about this particular recipe is how moist these muffins are, that to me makes a good muffin great! http://www.tasteofhome.com/recipes/chocolate-banana-muffins

· 1/2 cup butter, softened

· 1/2 cup sugar

· 1/2 cup packed brown sugar

· 2 eggs

· 1-1/2 cups mashed ripe bananas (about 3 large)

· 3 teaspoons vanilla extract

· 2 cups all-purpose flour

· 3 teaspoons baking soda

· 1 cup chopped walnuts

· 1 cup (6 ounces) semisweet chocolate chips ( I used 1 ½ cups)

Cream butter and sugars in a bowl. Then beat in the eggs, bananas and vanilla. Add flour and baking soda and mix just until combined. Get your chocolate chips and walnuts and stir them into the batter. Fill greased or paper-lined muffin cups half full. Bake at 350° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Recipe says these make 2 dozen, when I made them I got 22 I like to fill the muffin cups a tad bit higher.
